Chicken & Vegetable Green Curry

If you’re in the mood for curry, but don’t have a lot of time to make dinner, this is the recipe for you! It’s filling, tasty and best of all - easy to make.

INGREDIENTS:

  • 1 12oz bottle of Thai Green Curry Simmer Sauce (From Trader Joes. Here’s what it looks like.)

  • 1 lb. chicken tenders or chicken breasts

  • 1/2 bag of frozen green beans

  • 1/2 bag of frozen peas

  • 1/2 of an orange bell pepper

  • Basmati Rice

  • Red pepper flakes (optional)

DIRECTIONS:

  1. Start by boiling your water and Basmati rice (Follow the instructions listed on the bag. I made the smallest portion for this recipe and still had leftover rice)

  2. Heat olive oil in a medium size skillet

  3. Chop your chicken tenders or chicken breast into small bite size pieces, toss into the skillet and cook throughly. If you’d like an extra kick of spice, throw in a few red pepper flakes.

  4. While the chicken is cooking, steam your frozen vegetables (I have a super old Pampered Chef steamer that I absolutely LOVE using and highly recommend. It’s the smaller version of this one.)

  5. Chop the orange bell pepper into small pieces

  6. Once the chicken is fully cooked, throw your steamed veggies and bell pepper into the skillet

  7. Add the green curry sauce, mix well, and bring the mixture to a simmer

  8. One it’s simmered, take off heat and pour on top of your rice mixture. ENJOY!
