Dessert for Breakfast: PB & Chocolate Baked Oatmeal

I love oatmeal for breakfast, so when I stumbled upon Peanut Butter and Jilly’s “1 Bowl Peanut Butter and Chocolate Chip Baked Oatmeal” I knew I had to give it a try. I normally make a traditional bowl of oatmeal with almond milk and blueberries - which is yummy - but this sounded MUCH more fun today.

It’s really easy to whip up and you only need ONE bowl (which makes for minimal clean up!)

I made a few alterations to the recipe. I used a real egg rather than flax egg, and I also recommend sprinkling a little bit of cinnamon on top of the oatmeal when it’s fresh out of the oven.

This recipe is great for meal prep. You’ll have quite a few leftovers, which you can refrigerate and heat up each morning for breakfast.

After making this, I’m very excited to experiment with baked oatmeal - more to come!
